Treats from an ice cream shop that opened July 4 are made from the milk of neighboring cows.
Owner Ed Mehnert of Champaign, a longtime groundwater hydrologist at the Illinois State Geological Survey, has been making homemade ice cream for a couple of years. After his retirement Dec. 31, Mehnert said it was time to open his own shop: Red Bicycle Ice Cream at 2740 Philo Road, Suite D, in the Pines retail center in southwest Urbana.
